These margarita bars will bring a dance to your table and no tequila required!
Golden yellow creamy bites of sweet, citrusy lime notes against the crunch of the crust and the flaky sea salt finish is what this world needs more of. Every menu needs something tart to round out the meal and these margarita bars deliver. Great for holiday meals, parties, showers, girls night in....you get the picture...they are welcome at any table!
2 cups of all purpose flour
1 cup confectioner's sugar
1 cup butter softened
1 teaspoon of sea salt
4 large eggs
1 3/4 cup cane sugar
1/2 cup all purpose flour
1/2 cup freshly squeezed lime juice
flaky sea salt
INSTRUCTIONS: To make the crust: whisk together flour, sugar, salt. With a mixer, add in soft butter and mix until it starts to come together. Pinch some between your fingers and if it compresses then it's ready to press into a 12" x 8" baking sheet with sides. Press the dough evenly across entire bottom of baking sheet and 1/2 inch up the sides. It will seem like it's not going to be enough, but trust me....it is. If you're having trouble pressing it in, slightly dampen your hands to press it in. Bake in a 350* oven for 12-15 minutes until light golden brown. Let this cool while you prepare the filling.
To make the filling: Beat the eggs until they become a light yellow. Whisk in lime juice, sugar, flour, salt until smooth (no lumps). Pour into prepared crust. Bake in 350* oven for 25 minutes until filling is set. When it comes out of the oven gently shower with flaky sea salt. Let cool completely then dust with powdered sugar and garnish with lime zest. Cut into squares for serving.
