2 cups zucchini, shredded
1 cup carrot, shredded
1 stalk celery, shredded
2 scallions, chopped fine
4 large eggs
My Brother's House Salsa (Mild, Medium, or Hot)
Saute zucchini, carrots, celery, scallions in 2 tablespoons olive oil until just tender. Pour into mixing bowl and let cool slightly. Add beaten eggs and whisk together. In large non stick skillet, heat oil over medium heat. Cooking in batches, spoon 1/4 cup of mixture into the skillet (depending on size of your skillet how many will fit) and gently press with a spatula to cause it to spread a bit. Cook until just starting to brown and flip and brown the other side. Serve warm with the Tomato Butter. Yum!
Tomato Butter: Whisk together 2 parts of My Brother's House Salsa and 1 part melted butter. Serve warm.
